Joy’s Mustard (Vinegar-Free Mustard)
I created my own vinegar-free mustard, so I could enjoy all the many benefits of mustard, without any unwanted side effects.
- 1 cup organic yellow mustard seeds soaked for 24 hours in 2 cups filtered water
- 1/3 cup fresh organic lemon juice
- 1/2 tsp garlic powder
- 1 tbsp brown mustard seeds to add a little spice (use more than this if you like a spicier mustard)
- 1 tsp dried turmeric
- 1 dash sea salt or salt to taste
- 3-4 tbsp coconut sugar or more to taste (optional)
Blend everything in a high speed blender, add more lemon juice and water if necessary.
Stop and scrape the sides as needed.
After a couple of minutes everything starts to emulsify beautifully.
Store in a glass jar in the refrigerator.
Eat and enjoy!
