Joy’s Mustard (Vinegar-Free Mustard)

I created my own vinegar-free mustard, so I could enjoy all the many benefits of mustard, without any unwanted side effects.

Equipment

  • 1 high-speed blender

Ingredients
  

  • 1 cup organic yellow mustard seeds soaked for 24 hours in 2 cups filtered water
  • 1/3 cup fresh organic lemon juice
  • 1/2 tsp garlic powder
  • 1 tbsp brown mustard seeds to add a little spice (use more than this if you like a spicier mustard)
  • 1 tsp dried turmeric
  • 1 dash sea salt or salt to taste  
  • 3-4 tbsp coconut sugar or more to taste (optional) 

Instructions
 

  • Blend everything in a high speed blender, add more lemon juice and water if necessary. 
  • Stop and scrape the sides as needed.
  • After a couple of minutes everything starts to emulsify beautifully.
  • Store in a glass jar in the refrigerator.
  • Eat and enjoy!
